About the Cheese
Cheese is a dairy food made by curdling milk, usually from cows, goats, or sheep. Special enzymes make the milk separate into solid curds and watery whey, and the curds are pressed together into cheese. From there it can be aged into hundreds of different flavors and textures, and some kinds even grow a coat of harmless mold on the rind.
